Then the organ, folded in for the parts a predator treasures: liver for iron and a deep mineral note, heart for taurine and a richness that reads almost like reduction sauce. Next chicken, the base note, the reason the whole thing tastes like a meal instead of a mix. Then the fish, added last, for a clean, briny top note that cuts through the muscle's weight.
